Choosing local products is not a matter of bias but rather of conviction. Indeed, Quebec’s products are excellent and deserve a place in culinary creation despite their higher cost. It is of course a choice to marry Unibroue traditional beer to local products in our cuisine, but it is a choice that first and foremost reflects our identity and respect for our rich heritage.
